We recently picked up a big bag of farro at Costco. I had seen it used in recipes on cooking shows, but hadn’t tried it yet. I thought it would be a nice change for a whole grain. I use it just as a side dish or a bed of grains, but farro is also great in soups, stews, and salads. It reminded me a lot of barley, just more brown in color. It’s delicious with it’s chewy, nutty flavor.

Sunday, August 1st, 2010I saw Thomas Keller (chef/owner of French Laundry, Ad Hoc, Bouchon, and Per Se) demonstrate this roast chicken on Anthony Bourdain’s tv show No Reservations this past winter. After watching it I had to try it. This roast chicken is so simple. Anyone can do it. And it’s delicious. There is no need to change oven temperature or baste during cooking. The only seasonings are salt and pepper. If you wish to use other herbs you can, but the chicken is delicious just with salt and pepper.

Here is a 100% Whole Wheat version of no knead bread. This bread will be a little denser than the white bread, but the taste is wonderful. And of course, the whole wheat adds some nutritional value. The method and baking is the same, just a slight ingredient adjustment.
