I found this recipe awhile ago, but never wrote the source down.  I’ve changed it here a bit.  The original recipe calls for serving the dish cold, but I think it works hot as well.  This dish would also be great with some crumbled blue cheese added in, or pecans instead of walnuts.

This salad is easy, tasty, and healthy.  The avocado and walnuts have good heart healthy fats.  And everyone knows spinach is good for you.  The bright acidity of the lemon vinaigrette complements the rich, buttery avocado.  Plus, the lemon juice helps to delay the browning process of the avocado a bit.

This is an excellent hearty dish on a cold winter evening.  Since it’s pasta, it makes a lot, which is great for leftovers.  The red chard contributes a vegetable to the dish and the walnuts add protein and fiber.
