If you make a lot of homemade soups, then an immersion blender is a very useful kitchen tool investment.  Many immersion blenders come with multiple blade attachments for various jobs – mixing, pureeing, beating, and chopping.  I mainly use the blade for pureeing and mixing.

Double Boiler

A double boiler is nothing more than a pot placed over a pot of simmering water.  You want the pot sitting above the simmering water, not touching it.  Also, you want the top pot to sit snugly in the bottom pot, to prevent too much steam from getting into your ingredients.

If you make soufflés, egg white whipped cakes, or waffles often, then a copper bowl is a handy tool.  My main cake recipe calls for whipping the egg whites and I love soufflés, so I use it often.  The copper reacts with egg whites to helping to stabilize them when whipped.

A large balloon whisk is indispensable in the kitchen.  You can (almost) always use a large whisk or a fork for smaller whisking needs, but you need a large whisk for many tasks in which a small whisk just won’t do.  Look for a whisk with a number of wires with a large bulbous shape.
