Quinoa Taco
Quinoa Tacos
A few weeks I was working long hours and coming home late in the evening, so dinner was leftovers. We had chicken tacos over the weekend and made a huge amount of pick de gallo and guacamole. We also had a lot of extra corn tortillas. By the end of the week I ran out of chicken, but had a container of cooked quinoa in the refrigerator, hence quinoa tacos. Finding ingredients to put in a corn tortilla shell is a great way to clean out the refrigerator too.

I have wanted to make these breakfast tacos for a long time. We finally made breakfast tacos a few weeks ago when we had leftovers from taco night. It’s a lot of tacos for one weekend, but who doesn’t like tacos?

We often make tacos when we have leftover meat. We just season, reheat and build the tacos. Unless you have a good source for corn tortillas, it’s definitely worthwhile to make your own.

These tacos are based on the San Francisco classic, Crab Louie Salad. I wanted to use blue corn flour to add some color to the dish, but didn’t order it in time from the Internet, so I added my own coloring. These tacos are great for any meal — brunch, lunch, or dinner.

Smoked Salmon Taco with Creme Fraiche
Smoked Salmon Tacos
This is a twist on a bagel with lox. I used leftover homemade smoked salmon, corn tortillas, and crème fresh to make breakfast tacos. Then I topped them with red onion and caper salsa and chopped chives. You could also use lox, rather than homemade smoked salmon for the tacos if you wish. The recipe is easy to double or triple if you plan to have company. Serve it with some orange juice and a side of fruit for a complete breakfast.
