Roasted Chickpeas

Adapted from a Molly Steven’s recipe from Bon Appetit

Roasted chickpeas are an easy, healthy, and tasty snack alternative to chips.  Slightly nutty and crunchy, these little nuggets can take on any flavor.  Just change up the spices to create different flavors.  Below is a mainly cumin and coriander blend.  You could use basil, oregano, and thyme and sprinkle with Parmigiano-Reggiano for an Italian flavor.  For a Barbecue flavor try ground mustard, powdered garlic, powdered onion, paprika, and chili pepper.  Or, a salt and vinegar spice for Salt & Vinegar.

I love this soup in the winter.  It’s hearty, simple, and fast to cook.  Serve with some naan or pitas on the side.  Like most soups, the leftovers are even better.

I love roasted carrots.  Drizzled with olive oil and sprinkled with sea salt, roasted carrots almost taste like a sweet-savory dessert, at least to me.  Sprinkle with Toasted Cumin-Coriander Blend before roasting to get a lovely, fragrant warm spice note.

Pfeffernusse Cookies

I remember getting these German holiday cookies from a box around the holidays when I was growing up.  I don’t ever remember making them.  I love the strong spice flavors of Pfeffernusse, and the word is just fun.  These are great with a cup of coffee, an espresso, or black tea.  The cookies develop a stronger spice flavor as they get older, and the powdered sugar coating adds not only excellent sweetness, but also a festive holiday touch.
