Cucumber Bites with Cream Cheese and Dill
This is a crunchy, and fairly light quick little appetizer, snack or side dish. A soft goat cheese would also be excellent on these little cucumber bites. Dill, cucumber and cream cheese are a classic combination. Smoked paprika helps add a warm savory note and coarse sea salt enhances all of the combined flavors.

Thursday Throwback
Apple Pie
Apple pie is one of my favorite desserts, especially fruit desserts. This one uses Granny Smith and Pink Lady apples, providing a firm fruit filling with a sweet-tart taste. The type of apples you use will greatly influence the taste and texture of your pie. I hope to experiment with a few various apples in this recipe in the future. I suggest you buy a few apples you’d like to use and taste them before buying all you need for a pie, to make sure they are good and have the flavor you want. After all, it is the main ingredient.

TWD – Tuesdays with Dorie
Buttermilk Crumb Muffins
I love muffins with crumb toppings, although they are a bit more like dessert, so I was looking forward to making this recipe.
Like most of the recipes I’ve made so far from Baking with Julia, this one is straightforward. It’s also fairly simple. I almost wanted to replace the buttermilk with yogurt, because in my experience most baked goods work exceptionally well with this substitution, however I refrained since buttermilk is in the name. I did use butter instead of shortening.
The muffins came out fluffy and tender. The crumb topping adds a nice sweetness and texture to make these muffins a bit more special. Buttermilk Crumb Muffins are great for breakfast with coffee or tea, or for a snack.
Blueberries and lemon zest would be a wonderful addition for the next time I make these lovely little muffins.

Quinoa Tacos
A few weeks I was working long hours and coming home late in the evening, so dinner was leftovers. We had chicken tacos over the weekend and made a huge amount of pick de gallo and guacamole. We also had a lot of extra corn tortillas. By the end of the week I ran out of chicken, but had a container of cooked quinoa in the refrigerator, hence quinoa tacos. Finding ingredients to put in a corn tortilla shell is a great way to clean out the refrigerator too.
