Arugula Salad with Roasted Pumpkin and Creamy Pumpkin Vinaigrette

Here is yet another pumpkin dish served at our Pumpkin Spectacular this year.  I’ve included roasted cubed pumpkin as an option, because that’s how I made the salad.  However, I didn’t really care for the roasted pumpkin in the salad.  I didn’t like the texture.  My friend did like it, so I though I would keep it in as an option.  The salad is great even without the roasted pumpkin cubes.

I’m going to continue to play with the roasted pumpkin element and see what I can come up with for next year.

Pumpkin Spectacular 2013

What is a Pumpkin Spectacular?  An entire day and/or meal devoted to all dishes pumpkin.  My sister began the Pumpkin Spectacular a number of years ago.  For the past few years I’ve hosted one at my house.

For this year’s Pumpkin Spectacular I branched out a bit with ideas, and was very pleased with the results of these little experiments.  I will post the recipes over the next week (and try to remember to enter the links in this article once uploaded.)

This is a nice warm, sweet breakfast dish for a cold autumn morning.  If you prefer to use steel cut oats increase the liquid to 4 cups and cook for 30 minutes before adding in the pumpkin puree and vanilla extract.

Here’s a perfect warming breakfast for a cold fall day.  Pumpkin, cinnamon, nutmeg, and a bit of sweetness from maple syrup all cooked with steel cut oats.  Cook a batch up for breakfast throughout the week.
