This sweet shrimp dish is a tropical delight.  A hint of vinegar helps to subdue the sweetness a bit.  Serve this dish with steamed broccoli and brown rice, which soaks up the extra sauce nicely.

Ambrosia Salad

For this month’s Thursday Throwback I’m providing a couple different recipe versions for Ambrosia Salad — one made with all canned fruit, the other with mostly fresh and/or frozen fruit.

This was a common holiday and get-together salad with my family in Michigan, and always made with canned fruit.  But, if the fruit is fresh and in season, spend a bit more time to wash and cut it to make the fresh version.  Or try frozen and thawed fruit.

Adapted from Gourmet magazine

Pineapple Upside Down Cake, normally cooked in a cast iron skillet, can also be cooked in a round cake pan.  The oozy caramel sugar syrup glazes over the pineapple and cake, creating the perfect topping.  Served warm with ice cream and you have an old fashioned classic favorite!

Macaroni and Pineapple Salad

If you are looking for an easy picnic salad, try my Grandma’s favorite Macaroni and Pineapple Salad.  It will feed a group from six to thirty six simply by multiplying the ingredients.
