Cheese and Pepper Pasta (Cacio e Pepe)

This pasta is simple with few ingredients.  Definitely use real Parmigiano-Reggiano and Pecorino Romano, as well as freshly ground black pepper.  With so few ingredients, you don’t want to skimp.  This dish is great for a fast dinner, especially if you’re at the end of your groceries.  Pasta, cheese, and butter are staples in our house.  Topping the dish with a sunny side up egg is not traditional, but is great over leftover pasta the next day.

Last month at the Farmers’ Market I spotted a basket of small, green, slightly wrinkled and bumpy peppers.  I was told to quickly fry and salt them, and eat them right off the stem as an appetizer.  This little peppers are not hot, but pack a wallop of a green pepper flavor.  Not bitter, just very flavorful.

I cooked this dish about a week ago from one of my new favorite cookbooks, Lidia Cooks from the Heart of Italy.  I got the book a year ago for Christmas, and cooked a couple dishes right away.  I recently picked the book up again and cooked three dishes just this past week and have a couple more planned for this next week.  The dishes are fairly quick and easy and most use staple ingredients I already have.   This dish makes a huge amount, so it’s great for company or for freezing extra for an easy meal later in the month.  You could cut the recipe in half, but it takes the same amount of time to make more or less, so I would just make it all.  It’s best to make fresh roasted peppers, rather than using the jarred peppers for this dish.

Roasted red peppers are easy to make at home.  These peppers are sweet and full of antioxidants.  There’s no need to buy expensive jarred roasted red peppers (which are often stored in a liquid containing vinegar, giving them a sour taste.)  Use roasted red peppers to jazz up sandwiches or pizzas, or puree them with cream cheese to create a sweet and tangy vegetable dip.
