Serving Cheese

My number one rule when serving cheese is to let it come to room temperature before serving.  The cheese will have its fullest flavor at room temperature.  Even if I’m the only one eating I try to do this.  If you are serving a soft cheese and would like nice slices for crackers or a sandwich, slice it when you just pull it out of the refrigerator, then let it come to room temperature.  Otherwise, soft gooey cheeses like Brie can be spread when at room temperature, which works just as well.
