Filled Endives

I developed this recipe a number of years ago when I was looking for vegetable options for party finger foods and hors d’eurves. So many finger foods are heavy with lots of bread, cheese and meat. These are light and refreshing, and hold up well to sitting out. Nothing to wilt here. The citrus provides a sweet and tangy zing. The pomegranate seeds provide a tart burst. The celery and endive provide and nice crisp crunch. The cranberries provide a chewy sweetness. Finally the pistachios add a bit of umami and even more texture. Salad does not have to be boring and eaten with a fork.

I modeled this recipe after a broiled tamari salmon dish in The Healthiest Meals on Earth book.  This recipe is nice because it takes little time to prepare and doesn’t take much attention to cook either.  Serve it with a whole grain and green vegetable and you have an awesome healthy meal.

This month’s Bon Appétit provides a number of various ice pop recipes.  Here is a twist on their Campari-Orange Pop recipe, using cranberry juice in place of the alcoholic Campari, making it kid friendly too.  I suggest using 100% cranberry juice (meaning no other juice or sugar is added), which is a bit tart and puckery, but remember you are adding sugar in the form of syrup and orange juice, so it balances nicely here.

Grapefruit and Cara Cara Orange Salad with Tarragon

This is a refreshing late winter/early spring salad, when you are dreaming of summer fruits to come, but citrus fruits are still the best and tastiest option available at the moment.  It combines bright citrus flavor with rich extra virgin olive oil.  The tarragon adds a nice sweet, slightly anise flavor.  Sprinkle the fruit with coarse sea salt to help enhance the flavors of this delicious salad.  It is great as a first course, or as a light dessert.
