Onions
Onions are a true staple food. Used in the traditional French Mirepoix and the southern Trinity for soup and stock base, also used in the Italian Soffritto for stew and sauce bases, onions provide a sweetness and lovely depth of flavor to so many savory dishes.

Sausages with Caramelized Onions and Peppers
Here’s an easy way to jazz up sausages. Just caramelize some onions and peppers in a pan and top the sausages. If you like your food spicy feel free to add in some hot red pepper flakes or a sliced jalapeno to the onion-pepper mixture.

Green Lentils with Onions
Adapted from 660 Curries by Raghavan Iyer
I picked this curry dish the other week because it used more common ingredients, and mainly pantry staples, so I didn’t need to purchase many extra items during my grocery trip. It makes a lot and is a perfect meal when served with brown rice. I like adding some sautéed spinach on top or on the side to get some more vegetable in the meal.
