Caramelized Onion and Garlic Pizza with Frizzled Sage
This is one of the first dishes I attempted to recreate from a restaurant dish, at one of our favorite places to eat in North Beach, Café Divine. You slowly caramelize the onion and garlic until soft, sweet, and golden. It’s flavorful and offers a nice change from red pizza sauce pizza. Parmigiano-Reggiano offers a nice salty balance for the sweet onions and garlic. The frizzled sage adds a touch of green to this white pizza.

Cooked Chicken Pot Pie
Thursday Throwback – Chicken Pot Pie
Here’s a classic, hearty winter dish. Perfect for using leftover chicken and other vegetables left in the refrigerator. It makes a lot, so it’s also great to make early in the week. Roast a chicken on Saturday, make the pot pie on Sunday, and you have lunch and/or dinner for a few days during the week.

Red Tomato Salsa
Here’s an easy homemade tomato salsa. If fresh tomatoes are not in season use good quality canned tomatoes. When you make it yourself you can control how spicy or mild to make the salsa. You could even divide it in half and make half mild and half spicy to suit everyone’s tastes.

Caramelized Onions for French Onion Soup
Need a great cold weather recipe? Try this French Onion Soup recipe. It warms the house and the heart. It’s great to make on a Saturday or Sunday when you are working around the house. Though it takes a while to cook, it does not need much attention at all. And the leftovers are even better!
Cook Time: 2 hours, 45 minutes
Active Cook Time: About 20-30 minutes
Serves: 6-8

Pico de Gallo
Pico de Gallo is one of my favorite salsas. It’s bright in both flavor and color. It’s great for chips, nachos, and of course as a garnish on tacos. It would also be great as a garnish for a grilled hearty white fish. Don’t bother with the premade found at the supermarket, which often uses flavorless tomatoes. It’s easy to make your own and get that fresh summer taste.
