This is a simple and quick way to jazz up some raw nuts for everyday snacking or to serve when you have guests. Walnuts or almonds work well too. You can also add these little treats to salads for a sweet crunch.

Power Granola Bars

Adapted from The Healthiest Meals on Earth by Jonny Bowden
I mainly altered the type of sweeteners used in the original recipe. Also, I must have cut my bars slightly smaller, since I ended up with 20 bars, but the original recipe says it serves 12. Even dividing into 20 bars, each bar is still plenty filling. You could alter the type of dried fruit, nuts, spices, and even nut butter for different tastes. Because the oats and puffed brown rice is left whole, these bars are definitely more like a rich granola bar, as opposed to what I think of has energy or power bars. I’m looking forward to experimenting with different ingredients to get different flavors.

Seeded Rice
Nutty Seeded Rice
Adapted from The Healthiest Meals on Earth by Jonny Bowden, Ph.D., C.N.S
Added nuts or seeds to brown rice increase the protein of the dish and adds extra nutrients. It also offers an added crunch. Cooking the seeds with the rice softens them a bit, making the texture a bit more similar to the rice. Garnish with chopped parsley to accent the dish with some green.

Muesli with Raisins
Muesli
Muesli is a versatile, delicious, healthy, and easy breakfast or snack. The main ingredient is uncooked rolled oats soaked in a liquid, so it’s great for the warmer months when hot cereal just sounds too hot for breakfast. The soaked rolled oats are also mixed often mixed with nuts and fresh or dried fruits. The soaking liquid can be anything from water, milk, juice, plain yogurt, or milk alternatives. You can also add a sweetener if desired, but fruit will add some sweetness. Here is a basic recipe to get you started.
