This is a great lunch or light supper.  Feel free to add any fresh herbs you may have hanging out in the refrigerator.  Chives, parsley, cilantro, and thyme would all work well in this salad.  If you don’t like radishes, substitute carrots or red pepper for that added crunch and color.

Egg Salad Sandwich

Egg salad sandwiches always seem like such a comforting lunch.  Great for any weather, and anytime of year, it’s also hearty enough for dinner with a salad or vegetable crudites.  This version gets a bit of texture and flavor from bacon, while celery, scallions and dill add freshness.  Dijon mustard provides a nice bit of vinegar to balance the richness of the egg, mayonnaise and bacon.

While I don’t bread and pan fry foods a lot, occasionally it’s a nice change. The texture and flavor can be a nice change, and its simple to make and cooks quickly. Serve with some steam or sautéed vegetables on the side and you’ll have a complete dinner in about 30 minutes.

A few weeks I was working long hours and coming home late in the evening, so dinner was leftovers. We had chicken tacos over the weekend and made a huge amount of pick de gallo and guacamole. We also had a lot of extra corn tortillas. By the end of the week I ran out of chicken, but had a container of cooked quinoa in the refrigerator, hence quinoa tacos. Finding ingredients to put in a corn tortilla shell is a great way to clean out the refrigerator too.
