Grilled peaches are a fast, easy, and healthy dessert and the perfect way to complete a grilled summer dinner.  They’re excellent served with a chilled, crisp white wine or a glass of iced tea.  The heat of the grill concentrates the sugars in the peaches, making them sweet and soft.  Make sure your peaches are ripe, but not soft, otherwise they will just turn to mush when heated on the grill.

Grilled Pork Chop and Endive with Balsamic Glaze

Here is a recipe adapted from the latest Bon Appétit magazine (August issue).  It stood out to me for its simplicity, yet elegance.  It’s a great summer, outdoor cooking meal.  Yet, it could also work just as well any time of year; just cook it on a grill pan in doors if necessary.  Serve it with a simple spinach salad dressed with lemon vinaigrette.

Here’s another quick and easy way to cook broccoli.  Grill it!  Try the long, slender broccoli rabe for a more elegant look.  Great as a side dish for steak, chicken, or roasted portabella mushrooms.

Grilled Chicken

The recipe is based off an Alton Brown recipe.  The chicken was amazing.  Juicy, perfectly cooked.  The brine help keep the chicken juicy.  The skin is kept on and used to flavor the chicken, so oil or butter is not needed.  Also, keep in mind that the chicken pieces will cook at different times, so keep an eye on them, move them to low heat areas of the grill when necessary, and if necessary, pull a few pieces early and place them under tin foil.

Prep Time: 15 minutes
