Scrambled Eggs with Spinach and Feta
Scrambled eggs with spinach and feta is a great light, healthy, and easy breakfast. The spinach adds a wonderful bright green color and fresh flavor and the tang and saltiness of the feta offers an excellent savory element. I even make this during the week before work sometimes, if I have an extra 10 to 15 minutes.
