Egg Salad Sandwich

Egg salad sandwiches always seem like such a comforting lunch.  Great for any weather, and anytime of year, it’s also hearty enough for dinner with a salad or vegetable crudites.  This version gets a bit of texture and flavor from bacon, while celery, scallions and dill add freshness.  Dijon mustard provides a nice bit of vinegar to balance the richness of the egg, mayonnaise and bacon.
