I developed this soup with items I had stashed in my freezer.  It had an amazing rich and spicy flavor.  The rich coconut pairs beautifully with the pumpkin and the ginger chili contrast well, offering a nice spicy kick.

Here’s a hearty Thai curry with a great fall seasonal ingredient.  Choose a Kabocha, butternut, or other squash that remains somewhat firm when cooked.  Serve this warm and hearty curry over jasmine rice.

I like this refreshing take on quinoa and kale.  I find I always end up using plain quinoa as a quick side dish and always serve cooking greens sautéed with garlic.  I’m hoping this dish will inspire me to come up with some other creative uses for quinoa and kale.

Here’s another dish from 660 Curries.  The dish in the cookbook calls for using cauliflower, which sounds delicious as well.  It is a bit of a rich dish, with the coconut and the cashew.  Serve on a bed of rice and this dish is sure to be a crowd pleaser.

My roommate introduced me to these cookies this year.  He made them for our Cookies and Cocktails party.  They’re quick and easy to make, and a great cookie to enlist children’s help, although adult supervision is still needed.  The cookie is slightly chewy with an excellent chocolate flavor.  Serve with a glass of milk.
