Adapted from The Splendid Table’s How to Eat Weekends by Lynne Rossetto Kasper and Sally Swift

This is a refreshing appetizer, snack, or even side dish and great for picnics and BBQs.  The jicama is a hearty, crunchy vegetable, so it holds up well in the dressing.  The lime juice helps to keep it from turning brown.  Making this dish a bit ahead of time allows the jicama and mango to absorb the flavoring.

I developed this soup with items I had stashed in my freezer.  It had an amazing rich and spicy flavor.  The rich coconut pairs beautifully with the pumpkin and the ginger chili contrast well, offering a nice spicy kick.

Chile-Lime Popcorn offers a tangy, spicy, salty treat for a unique twist on buttered popcorn.  This flavor is similar to salt and vinegar, but with a touch of spice from the chile powder and the lime acts like the vinegar (since it’s an acid).  Best of all, you can do this in the microwave.
