Roasted Chickpeas

Adapted from a Molly Steven’s recipe from Bon Appetit

Roasted chickpeas are an easy, healthy, and tasty snack alternative to chips.  Slightly nutty and crunchy, these little nuggets can take on any flavor.  Just change up the spices to create different flavors.  Below is a mainly cumin and coriander blend.  You could use basil, oregano, and thyme and sprinkle with Parmigiano-Reggiano for an Italian flavor.  For a Barbecue flavor try ground mustard, powdered garlic, powdered onion, paprika, and chili pepper.  Or, a salt and vinegar spice for Salt & Vinegar.

I love this soup in the winter.  It’s hearty, simple, and fast to cook.  Serve with some naan or pitas on the side.  Like most soups, the leftovers are even better.

This Indian dish is a nice substantial vegetarian dish, thanks to the chickpeas.  The mustard greens and the yogurt add a nice tartness to the dish.  Serve over rice for a complete meal.
