Hummus is a great healthy, inexpensive dip and spread.  Since it’s made with chickpeas it has protein, fiber and minerals.  Purchasing prepared hummus in stores will cost you a bit more than making it yourself.  Plus, the prepared versions often have a few extra ingredients to help preserve the food.  It’s simple and easy to make your own hummus, but you do need a blender or food processor.

Quinoa Salad with Chickpeas and Roasted Carrots

I made this salad for a potluck Independence Day party; inspired by a dish I got for lunch from a small deli-like restaurant in San Francisco.  This dish is perfect for a crowd.  It’s easy to scale up or down.  It’s even better the second day once all the dressing and flavors have melded, so you can make it ahead.  It tastes great warm or at room temperature.   It’s also healthy and uses mainly pantry staple ingredients, so it’s easy to throw together at the last minute.  Sprinkle the top with fresh chopped scallions or parsley just before serving to add some green to the dish.

You could also serve it as a main dish with spinach, roasted broccoli or a green salad as a side dish.

Roasted Chickpeas

Roasted chickpeas are an easy, healthy, and tasty snack alternative to chips.  Slightly nutty and crunchy, these little nuggets can take on any flavor.  Just change up the spices to create different flavors.  Below is a mainly cumin and coriander blend.  You could use basil, oregano, and thyme and sprinkle with Parmigiano-Reggiano for an Italian flavor.  For a Barbecue flavor try ground mustard, powdered garlic, powdered onion, paprika, and chili pepper.  Or, a salt and vinegar spice for Salt & Vinegar.

I love this soup in the winter.  It’s hearty, simple, and fast to cook.  Serve with some naan or pitas on the side.  Like most soups, the leftovers are even better.

This Indian dish is a nice substantial vegetarian dish, thanks to the chickpeas.  The mustard greens and the yogurt add a nice tartness to the dish.  Serve over rice for a complete meal.
