Butternut Squash with Roasted Chestnuts, Pearl Onions, Sage and Wild Rice

I created this wintery, vegetarian main dish using ingredients I had on hand.  Frozen pearl onions are a great time saver, as they are already peeled.  Pre-cooked and peeled chestnuts are also handy, which can be found in better supermarkets or online, jarred or vacuum packed.  You can reheat them in the oven or in a skillet.  The most time consuming part is peeling and cutting the butternut squash.  The wild rice really helps had a nice nutty flavor and a good texture, since the butternut squash and chestnuts are quite soft.

Arugula Salad with Butternut Squash and Wheat Berries

I created this salad using leftovers in my refrigerator.  I like the peppery arugula paired with the sweet, nutty butternut squash.  The wheat berries are also slightly nutty and provide a nice fine crunch and a bit of chewiness to add some texture to the salad.  Balsamic vinaigrette with a bit of lemon works well, with the slightly sweet flavor.  A splash of lemon really adds a pleasant zing and helps enhance all the flavors.
