Roasted Fennel, Orange, and Olive Salad
Here’s a great winter salad. The orange offers a fresh burst of flavor and pairs well with the sweet anise flavor of the roasted fennel and the tang of the black olives. It is a simple dish to make. It is also great for entertaining or for leftovers, as it is excellent cold, at room temperature, or hot. Roasting fennel mellows out the anise flavor and adds a nice sweetness to this wintery vegetable.
