Spinach Salad with Avocado, Walnuts, and Parsley
Spinach Salad with Avocado, Walnuts and Parsley with Lemon Vinaigrette Dressing
This salad is easy, tasty, and healthy. The avocado and walnuts have good heart healthy fats. And everyone knows spinach is good for you. The bright acidity of the lemon vinaigrette complements the rich, buttery avocado. Plus, the lemon juice helps to delay the browning process of the avocado a bit.

Grapefruit and Avocado Salad with Tarragon 2
This is a refreshing winter salad, combining the bright citrus flavor of grapefruit with the creamy, rich, buttery avocado. The tarragon adds a nice sweet, slightly anise flavor. Drizzle the fruit with an excellent quality extra virgin olive oil and coarse sea salt to help enhance the flavors of this delicious salad. This salad is great as a first course, or as a light dessert.

Brussel Sprouts with Pancetta and Pecans

A new lunch and dinner meal plan for one week, for two people. If you are cooking for more you can easily double the ingredients/recipes. Leftovers are utilized for lunch. The chicken leftovers cooked on Sunday are used in two other recipes later in the week, so make sure to portion it out. Links to the recipes are included.

Avocado and Jicama Salad
Adapted from Bon Appétit
In my effort to try more of the recipes from the cooking magazines I get, here’s another recipe from the latest Bon Appétit magazine. I didn’t realize how much I liked jicama until I made this salad. Crunchy, slightly sweet, and refreshing. I forgot to look for avocado oil, so I’ll have to make it again to taste the difference. If you cannot find avocado oil, or just don’t have it, good quality extra virgin olive oil will work.
