Avocado Honey Pudding Pops

I first made avocado ice cream back in 2010, when I had an abundance of avocadoes going ripe very quickly.  What better way to stop the ripening process then freeze them in the form of ice cream?  I used Alton Brown’s Avocado Ice Cream recipe, and it was delicious.  It reminded me a lot of green tea ice cream.  It is a bit on the grassy side, so we topped the ice cream with drizzles of honey, and it was a perfect match.

Here is an adaptation of avocado ice cream, but in the form of an ice pop.  I used honey as a sweetener, since it helps turn the savory avocado into a delicious dessert.

Beet Tartare with Avocado Mousse and Citrus Tapenade

This impressive looking vegan dish is great for entertaining.  While it is a bit time consuming, most of the dish can be made 2-3 days in advance.  And most of the time is hands off.  Plus, you can serve it cold or at room temperature.  Assembly can be done up to an hour before serving, thanks to the lime juice in the Avocado Mousse, which helps prevent browning.

This salad is easy, tasty, and healthy.  The avocado and walnuts have good heart healthy fats.  And everyone knows spinach is good for you.  The bright acidity of the lemon vinaigrette complements the rich, buttery avocado.  Plus, the lemon juice helps to delay the browning process of the avocado a bit.

This is a refreshing winter salad, combining the bright citrus flavor of grapefruit with the creamy, rich, buttery avocado.  The tarragon adds a nice sweet, slightly anise flavor.  Drizzle the fruit with an excellent quality extra virgin olive oil and coarse sea salt to help enhance the flavors of this delicious salad.  This salad is great as a first course, or as a light dessert.
