Adding sliced almonds and scallions transforms plain old brown rice into a side dish that’s a bit more special, fun, tasty and nutritious.  Sliced almonds add texture and crunch, while sliced scallions add a refreshing bit of green, oniony spice, and tang to keep the dish fresh.  Just two quick and simple additions really help pep up a brown rice side dish.

This almond coating is a nice change from a plain baked chicken breast.  The coating offers a bit of crunch and added flavor too.  Serve on a bed of farro and with a side of steamed broccoli for a complete meal.

Buttered Haricot Vert with Toasted Almonds

Haricot Vert is French for green bean.  The green beans grown in France tend to be thinner and more delicate, but with a great deep flavor.  You can definitely substitute American green beans or string beans in this recipe, just try and pick out the thinner, smaller beans.

For this recipe I actually use Trader Joe’s frozen haricot vert, which defrost and heat up beautifully, offering availability of a great summer vegetable in the fall and winter.  In fact, I intend to use this recipe for a green side dish this Thanksgiving, since it’s super fast, requires little attention, and is difficult to mess up.  If you decide to add this dish to your Thanksgiving menu, or other dinner party I highly recommend toasting the almonds earlier in the day and setting them aside.  This way you won’t get distracted and burn them.

Mixed Greens with Sliced Grapes, Toasted Almonds, and Sea Salt

This summer salad is similar to the nectarine salad I posted back in June.  The grapes add sweet bursts of juice which pairs well with the savory, toasted, crunchy almonds.  I like using red wine vinegar for this dressing, but you could also just use the basic vinaigrette dressing if you have some on hand.   Serve with a piece of crusty bread on the side.
