Like most dressings, Mustard Vinaigrette is simple and easy to make.  It’s the same proportions and technique as Basic Vinaigrette Dressing; you just add some Dijon mustard.  You can easily double or halve the recipe.  Use this on green salads, as a sauce for chicken, fish or pork, or as a dressing for a grain salad.

Hummus is a great healthy, inexpensive dip and spread.  Since it’s made with chickpeas it has protein, fiber and minerals.  Purchasing prepared hummus in stores will cost you a bit more than making it yourself.  Plus, the prepared versions often have a few extra ingredients to help preserve the food.  It’s simple and easy to make your own hummus, but you do need a blender or food processor.

Here’s a slight twist on traditional Italian Genovese Pesto.  Radish greens are used in place of basil.  Pepitas (pumpkin seeds) are used in place of pinenuts.  This is my favorite way to use radish greens.  I have sautéed them in the past, but they tend to be a tad bitter.  Making a pesto helps to balance out the bitterness.  I’ve also made it with and without Parmigiano-Reggiano.  It works well either way.  You just may need a bit more salt if you leave out the cheese.

Creamy Pumpkin Dressing

This creamy pumpkin dressing is a bit sweet and a bit tangy.  The yogurt really is a must here.  I suppose sour cream could also work.  I tasted the dressing without yogurt first.  When I added some yogurt in and it was so much better, with a more complex and tangy flavor.
