This delicious spring dish is a quick and easy vegetarian one-pot meal.  It can be served hot, cold or at room temperature, making it a great make ahead salad.  Or, serve it as a side dish to Roast Chicken or Lemon Buttered Salmon.  In which case you’ll have a two-pot meal.

These gorgeous Scarlet Runner Beans are maroon with black speckles.  Larger than a cannellini bean, but smaller than a Christmas Lima, they have a natural meaty taste and texture.  Seasoned simply with salt brings out their wonderful sweetness.

Keep in mind the beans can be cooked 2-3 days ahead of time and stored in the refrigerator.  Or, you can freeze the cooked beans for up to a month.

The grated beets in this meatloaf help it too stay moist and tender.  The beets also add some sweetness and a beautiful color.  The tangy, savory tamarind glaze complements the sweetness of the beets.  The Lemon Yogurt Sauce adds a refreshing, cooling zip.  Pair the beet loaf with roasted veggies and sautéed greens.
