Carrot Cake Seed & Nut Muffins (& Bread)

This is a twist on the base recipe – Seeded Nut Bread.  Adding warm cooking spices like cinnamon and ginger, shredded carrots and sweet raisins turns it into a delicious Carrot Cake Seed & Nut Muffin.  Like the base recipe, I call it a seeded nut bread or muffin, since there is no wheat grain – just seeds and nuts.

Seeded Nut Loaf (or Muffins)

These little loaves are a delicious and healthy alternative to bread.  I try not to call this bread, since there is really no flour or rising agent, so I decided to call it Seeded Nut Loaf, because really that’s what it is.  It’s great for breakfast or a snack.  I love avocado spread on a slice.  Hummus and almond butter are also delicious.  You can easily use this when making open face sandwiches and toast.

Goji Berry and Coconut Oatmeal Bake

I have an abundance of goji berries right now.  I accidently grabbed the goji berry bag at the grocery store, instead of the mulberries.  I didn’t notice until I came home and found the exact same bag in my pantry.  So, here’s a Goji Berry and Coconut Oatmeal recipe.  If you don’t have goji berries, substitute any other dried fruit — cranberries, blueberries, diced apricots, or even raisins.

This healthy baked oatmeal smells divine as it bakes up — a perfect comfort food breakfast for a wintry morning.  It’s great for brunch or a crowd of people too, just double the recipe.  Bake it up the night before; then just reheat in the morning.  Or, use it throughout the week, reheating portions as needed.  It’s also great for on-the-go, since they slice easily into squares.

This is a nice warm, sweet breakfast dish for a cold autumn morning.  If you prefer to use steel cut oats increase the liquid to 4 cups and cook for 30 minutes before adding in the pumpkin puree and vanilla extract.

A sweet, braided bread has been on my holiday baking list for years, but I never get around to making one. The Tuesdays with Dorie baking group is an excellent motivator for finally making braided bread for the holidays. Braided breads just look so festive!
