Pecorino Toscano

Pecorino Toscano is sheep’s milk cheese from Tuscany, Italy.  Often the cheese is aged 4 months or longer, to create a firm cheese for slicing or grating.  Pecorino Toscano is a great snacking cheese and pairs well with dried fruits, honey and salami.  On it’s own the cheese has a firm texture, with a variety of flavors layered throughout including slightly herbal, mildly tangy, a tad sweet and a bit peppery.  It works well on sandwiches, as well as with pasta.  At some cheese mongers you can find Pecorino Toscano aged different months.
