This sweet shrimp dish is a tropical delight.  A hint of vinegar helps to subdue the sweetness a bit.  Serve this dish with steamed broccoli and brown rice, which soaks up the extra sauce nicely.

Trader Joe’s Spinach and Kale Bites

These little tender green bites from Trader Joe’s are quite tasty, and a bit addictive.  A perfect healthy appetizer option, they have a slow warm spice, to complement the cheesy spinach and kale.  They are great for kids and a fun way to sneak them some vegetables.  I’m always trying to find healthier vegetable or fruit based appetizers, and this fits the bill.

Thick juicy spears of tender asparagus, stuffed with sweet roasted red pepper and creamy aioli, and wrapped with salty savory prosciutto.  This is a great appetizer or first coarse, and can be prepared a bit in advance, served either at room temperature, or cold.  It’s also great for brunch.
