TWD – Tuesdays with Dorie

Chocolate Mascarpone Cheesecake

We really enjoyed this decadent cheesecake.

Overall the Chocolate Mascarpone Cheesecake is easy to make.  I only made half the recipe and baked them in two smaller 4” pans, and it worked out great.  Also, I used plain yogurt rather than sour cream, since I always have yogurt in the house.

One did collapse a bit when I flipped it back over, right side up, after adding the cookie crumbs.  I pressed down a bit too hard as I flipped.  It still tasted great though.  Perhaps I should have cooled them in the refrigerator for a bit.  I flipped them at room temperature.

My husband microwaved a leftover piece of cheesecake for about 15-20 seconds, and the texture was like a light and fluffy chocolate mousse.

I had some troubles flipping the cake upside down, I think it was the same for many of us!!
Some cocoa powder on top and it was right!

Those little springform pans are adorable! And those green cookie crumbs would be perfect for St Patrick’s Day.

I’ve always wanted to buy the mini pans. I just don’t have the room for them. Your cake looks great.
