Chocolate Mascarpone Cheesecake
We really enjoyed this decadent cheesecake.
Overall the Chocolate Mascarpone Cheesecake is easy to make. I only made half the recipe and baked them in two smaller 4” pans, and it worked out great. Also, I used plain yogurt rather than sour cream, since I always have yogurt in the house.
One did collapse a bit when I flipped it back over, right side up, after adding the cookie crumbs. I pressed down a bit too hard as I flipped. It still tasted great though. Perhaps I should have cooled them in the refrigerator for a bit. I flipped them at room temperature.
My husband microwaved a leftover piece of cheesecake for about 15-20 seconds, and the texture was like a light and fluffy chocolate mousse.
