TWD – Tuesdays with Dorie


Challah

This was my first time making challah.  This particular recipe was a lot like making brioche dough, but with a bit less egg.  Although, this challah dough was a bit stiffer than the brioche dough I’ve made previously.

I made half a recipe, and mixed it in my stand mixer.  It’s really easy to pull this together.  Rolling the logs took a bit of time.  Since the logs kept springing back, I stopped to let them rest a number of times.  The bread baked up beautifully, with a wonderful oven spring and deep gold color.

I plan to freeze it for later this month, so I haven’t actually tasted it yet.  But, it looks and smells wonderful.

    This was my first time making challah too. I was surprised it was so easy! It looks great. I also froze mine and plan on making French toast with it.
