Double Chocolate Cookies
We loved these cookies: complex, chocolaty and chewy. My favorite cookies are soft and slightly chewy, so these cookies fit the requirement. The deep chocolate taste, with chocolate chunks offers great depth of flavor and good texture. I didn’t have instant coffee, so I used super fine ground coffee and that seemed to work well.
We topped a couple cookies with chopped hazelnuts, and put some caramel in the center of a few too. Both variations were excellent. I plan to make another batch for the holidays, adding in peppermint extract and crushed peppermint candy.
These cookies are a snap to make. I also like that you can keep the dough in the refrigerator for a few days. Baking in steps is always good for the holidays. Also, having the option to bake a few cookies at a time, over the course of 4 days, means fresh from the oven cookies whenever guests drop in.

I’ve become so addicted to these cookies that I had to find a strategy: I’ve deep frozen more than half of them (already baked, of course).

PS: I’ve added sliced hazelnuts and chopped dried apricots to mines.
Ooh, I like the dried apricot idea. Now that you mention dried fruits, dried cherries sound good too.
I need to freeze some of mine, before we eat them all.

Dried fruit and nuts sound like a fab idea, I’m also thinking about adding flavoured to these cookies. Love the shiny crackly top on your cookies!
