Creamy Pumpkin Dressing

This creamy pumpkin dressing is a bit sweet and a bit tangy.  The yogurt really is a must here.  I suppose sour cream could also work.  I tasted the dressing without yogurt first.  When I added some yogurt in and it was so much better, with a more complex and tangy flavor.

Prep Time: 5 minutes

Makes: About ½ cup


2 tablespoons pumpkin puree

2 tablespoons apple cider vinegar

1 tablespoon plain yogurt

½ teaspoon brown sugar

⅛ teaspoon fine sea salt

Freshly ground black pepper

¼ cup olive oil


Bowl, with a lid if storing


Measuring cups/spoons


Add the 2 tablespoons pumpkin puree, 2 tablespoons apple cider vinegar, 1 tablespoon yogurt, ½ teaspoon brown sugar, ⅛ teaspoon fine sea salt, and freshly ground black pepper to a bowl.  Whisk to combine.  Slowly stream in the olive oil, while continuously whisking, to emulsify the dressing.

The dressing can be stored in an airtight container in the refrigerator for 3-5 days.
