Johnny Cake Cobblers

This recipe was simple to put together and turned out quite well.  While there was quite a bit of topping to fruit ratio, adding whipped cream helped to balance it out.  The cobbler felt almost like an upside-down shortcake.  The cornmeal was interesting, but if I make this again I plan to use just all-purpose flour.

I’m interested in trying this with pear or apple (or pear and apple), with an all flour biscuit.  However, I like crisps so much, I may have a hard time making a cobbler rather than a crisp.  Crisps just have such a great topping to fruit ratio.

Eastern Mediterranean Pizza

Overall we loved this recipe.   The spices complemented the ground lamb splendidly.  It was just the right amount of spice.  Using all spice and cinnamon in savory dishes can be overwhelming if used too much.  This amount was perfect.  The spice also helped combine the sweet tomatoes with the savory lamb.  The crunch and toasty-ness from the pine nuts brought a lovely depth of flavor and texture.  The small individual size pizzas were a nice change of large pizza pies.

This is a great BBQ spice blend for chicken, pork, or steak.  It’s also great to use as a taco seasoning.  You could also use this for any oven baked meat dish too.  Try it on this grilled chicken.
