Cowgirl Creamery Clabbered Cottage Cheese

When I saw Andrew Knowlton mention this cottage cheese in a recent issue of Bon Appetit magazine I had to try it. I had almost purchased it before, but since it is about twice the price of other cottage cheese I held off.

It’s worth the price.

This cottage cheese has more nuanced flavors than any I have ever had and with an amazing texture. Slight sweet at the start, with a pleasant tang at the finish. With a toothsome texture in the curds, and a smooth sweet “dressing” coating them this is one divine cottage cheese.

Upon researching Cowgirl Creamery’s cottage cheese, I learned they use Strauss Family Dairy Milk to make the curds. Clabbered cream (cream you need to spoon, rather than pour) is added afterwards to coat the curds.

Seek out this cottage cheese.  You’ll love it.
