I’ve never made popovers before, and these little guys were so much fun to make. What a simple recipe too. When I took them out of the oven it looked like 8 abstract sculptures sitting in ceramic cups. Golden, with a light crispness on the outside and soft and tender on the inside, and not too gooey at all.

I used ceramic custard cups and they turned out beautifully. I have another recipe that suggests letting the batter sit for 30 minutes before baking to allow the flour to bloom. I’m curious to see if there would be a difference in the final popover.
