Chopped Cucumber Watermelon and Goat Cheese Salad

Chopped Cucumber and Watermelon Salad with Crumbled Goat Cheese

Prep Time: 10 minutes

Serves: 4 side dishes

Ingredients

1 lemon cucumber, 1/4″ cubes

1/2 English cucumber, 1/4″ cubes

1 cup watermelon, 1/4″ cubes

1/4 cup goat cheese, crumbled

1 lemon, zest and juice

2-3 tablespoons lemon extra virgin olive oil, or regular extra virgin

1/2 teaspoon fine sea salt

Freshly ground black pepper

Equipment

Large bowl
Knife
Cutting board
Microplane zester

Process

Cut the lemon cucumber, English cucumber, and watermelon into 1/4″ cubes and add them to the large bowl.

Zest the lemon over the fruit. Squeeze the lemon juice over the fruit. Drizzle 2-3 tablespoons extra virgin olive oil over the fruit. Sprinkle with 1/2 teaspoon fine sea salt and freshly ground black pepper. Toss to combine and coat the fruit in the lemon and oil.

Sprinkle the crumbled goat cheese over the top and serve.
