I’ve now seen and heard of this hard boiled egg cooking method from a few chefs/books/cooking shows and every time I use it the hard boiled eggs come out perfect.  It may seem like common knowledge to some people, particularly those who have studied French cooking, but for me it was a revelation.

Vosges Chocolate Bars – Black Pearl Bar & Enchanted Mushroom Bar

The Black Pearl Bar and the Enchanted Mushroom Bar are a couple of the first Vosges chocolate bars I have tried.  Both quite good, but I was expecting, or maybe hoping, for stronger flavors.  I like how both bars contain a somewhat dark chocolate, 55% for the Black Pearl and 66% for the Enchanted Mushroom.

Hazelnut Chocolate Chunk Cookies with Hazelnuts

The classic cookie with a nutty twist — hazelnut chocolate chunk cookies with hazelnuts.  The hazelnuts get a bit soft when cooked, so the crunch is subtle, but the hazelnut flavor is outstanding.  Equal Exchange is the only brand of chocolate bar I’ve found with ground hazelnuts, most others are chunks of hazelnut, which is okay too.  The bittersweet chocolate chips combined with the sweet hazelnut milk chocolate help balance the sweetness for a divine cookie.  Be sure to have plenty of milk around when you make these cookies.
