There are a couple ways to get nuts lightly toasted. Either way you need to watch them closely, since nuts can go from toasted to burnt very quickly.

Most often I throw a handful of nuts in a dry skillet and set it over medium to medium-low heat on the stove. Every few minutes I shake the pan to rotate the nuts around. When you can smell the nutty fragrance, and the nuts are golden, remove the pan from the heat and pour the nuts onto a plate to cool.

The other way to toast nuts is to roast them in the oven. This is a good method if you are toasting a large quantity of nuts. Turn the oven to 375 degrees Fahrenheit. Once the oven is preheated add your nuts, in a single layer, to a rimmed baking sheet and roast for about 4 minutes. Rotate the nuts about and roast for another 4 minutes or so, or until the nuts are fragrant and slightly golden. It’s best to transfer the roasted nuts to another plate to let them cool.
