Lemonade Lemon Jell-O

Lemonade Lemon Jell-O is a simple, refreshing summer dessert.  Sweet and tart lemon combine with rich whipped cream for a perfectly balanced end-of-meal treat.

Cook Time: 10 minutes; plus 2 hours chilling; plus overnight chilling

Serves: 6 people

1 6 oz. package of lemon Jell-O

2 cups boiling water

6 oz. frozen lemonade concentrate

1 cup whipped cream (homemade is best)

1-2 large bowls

Sprinkle the lemon Jell-O into the 2 cups of boiling water and whisk until dissolved.

Spoon the 6 ounces of frozen lemonade concentrate into the dissolved Jell-O and whisk to combine.

Let the Jell-O chill until it’s a jam-like consistency.  This will take about 2 hours.

If using homemade whipped cream, make this around the 2-hour mark or just before.

When the Jell-O is jam-like, fold the whipped cream into the lemon Jell-O.  Chill overnight for best flavor and consistency.

If your Jell-O sets completely before you fold in the whipped cream, cut the Jell-O into small squares and then fold in the whipped cream.  The consistency will be different, but still taste just as good.  It will look more like a Jell-O salad.

Serve in pretty glass bowls or goblets and garnish with a lemon wedge and berries.
