French Strawberry Cake
This was my first time making a Genoise cake and I think it turned out pretty well. It did deflate a bit more than I would have liked. But, I was still able to get my cake cut into three layers. Three very thin layers.
Overall I was not too impressed by the flavor. Maybe it’s because I’m used to sweeter American cakes. The strawberries I purchased were super sweet with wonderful strawberry flavor.
Bringing it to room temperature, after slicing, but before eating, does help a bit. But, I don’t know that I would make this again. It does look beautiful once all put together.

My layers were pretty much the same size as yours and I found that since they were thinner, the strawberry juices soaked up faster and better the genoise. Your cake looks great!
