Adding pesto to canned tuna is a nice change from the common mayonnaise usually used.  I also like adding pine nuts, which is used in the popular Genovese Basil Pesto.  Wrapping the tuna up with some spinach in a burrito wrap offers an easy, portable sandwich.

Total Active Prep Time: 5-10 minutes

Serves: 2

Ingredients

2 tortilla wraps

2 – 6 oz. cans tuna

¼ to 1/3 cup basil pesto (homemade or store bought)

2 tablespoons pine nuts

2 small handfuls spinach

Fine sea salt, to taste

Equipment

Wooden Spoon

Can Opener

Large Bowl

Process

Make your pesto according to the link above.

Open and drain your tuna and add it to a bowl.  Add in the ¼ to 1/3 cup pesto and 2 tablespoons of pine nuts.

Mix to combine.  Taste for seasoning and add more fine sea salt if necessary.

Place a small handful of spinach in the center of each tortilla.  Top the spinach with the tuna pesto mixture (half the mixture per tortilla).

Roll up like a burrito, or just roll from one side to the other, cut and serve.
