Pecan Sticky Buns

Not too much to say…except for WOW!

I love these gooey, flakey, buttery, sweet and nutty sticky buns.  The recipe was easy and straightforward.  Yes, it looks a bit daunting, but it is more about scheduling/timing.  It’s helpful to block out at least half a day for the rolling, chilling, filling, chilling, slicing, rising, baking.

I made the dough on Friday night, and even made a mistake when I got distracted.  I added all the butter in with the flour at the mixing stage.  It worked out completely fine though.

One recommendation, make sure you really adhere to the chilling times.  When I went to roll my dough for the second time to sprinkle on the cinnamon-sugar-pecan filling, it started springing back on me.  It was a warm day and so I would have benefitted from chilling it a bit longer to get it nice and cold.

The brioche dough has a nice sweetness to it.  The dough itself is not super sweet, which works well since more sugar is added in the filling and topping.

    Nice process detail.
    Brioche does like its cold & rest, doesn’t it? But all that time investment pays off when those buttery tender morsels make it out of the oven. Yum
