TWD – Tuesdays with Dorie
Pizza Rustica
Overall the recipe was easy to make, didn’t take long, and everything went smoothly (except for our grocery store didn’t have power when I went to buy the ingredients!)
The crust tore a bit on me, but I just patched it. I also didn’t have quite enough for the 12 strips of lattice, but I guess I cut my strips a bit thick. The filling was tasty, but the crust was too sweet for me. I thought the third cup sugar was a bit much. If I make this recipe again I will definitely make the crust savory.
Since there are so few ingredients in the filling, I highly recommend using the best quality ingredients you can afford. This helps make the filling flavorful. I did substitute smoked mozzarella for the mozzarella, and it worked well. I think this would be a really good brunch dish. It would be interesting to try various filling ingredients too.
