Orach

I am in love with Orach, also known as wild mountain spinach.  This deep purple, almost burgundy lettuce (but also comes in white and green) has a high mineral content, making it a bit salty.  It’s flavor is a bit like spinach and it’s amazing in salads.

I use it in combination with other lettuces, as a salad made entirely with orach could be too much.  When using orach in salads you don’t need to add too much salt to the dressing.  I usually just finish with some finishing sea salt.

I find mine at Farmers’ Markets.  Check your local markets or order some seeds to grow it yourself.
