Burrito It!

For the past few months we’ve been keeping flour tortillas on hand.  They last a while if stored in the refrigerator and are great for utilizing leftovers or creating a quick meal whether breakfast, lunch, or dinner.

A few common uses are bean and cheese burritos, breakfast burritos, and of course quesadillas.  A can of pinto or black beans and some cheddar cheese and you have a meal.  For breakfast burritos, scramble some eggs and add cheese.  If you have it add in some breakfast meat.  Salsa or sour cream are great toppers or additions, but not necessary.  For quesadillas many additions work well with the cheese — chicken, pork, beef, and beans.

Flour tortillas are also a great with tuna salad, chicken salad, or egg salad.  Or, how about filling a tortilla with a leaf lettuce salad and grilled shrimp?

My husband has also been creative, filling wraps with leftover beef stew, ribollita, and pot roast.

You can also cut them in triangles, drizzle with olive oil and sea salt, and bake them for chips.
