Irish Soda Bread
I made the Irish Soda Bread over a week ago and we had it with our Corned Beef and Cabbage. The bread turned out great. I will definitely keep this recipe in my rotation. (In fact, I’ve already baked a second one, which helped me finish off a quart of buttermilk.)
I’m looking forward to trying this bread with various additions, especially various cheeses. I made my second batch on a weekday evening. Four ingredients, 5 minutes to mix, and under an hour to bake, this bread is definitely a great alternative when you don’t have the time (or did not plan ahead) to wait for yeast dough to rise.
The bread did not get super hard by the end of the day, even thought the recipe mentioned it would get hard. I wrapped it tightly and we had some for toast the next day. I spread it with some leftover apricot levkar.

This bread is addictively easy to make, isn’t it?
Yes, so easy that I may not make yeast bread nearly as often now.
This was so easy – I loved that it can be customized with add ins or scaled to zize
