Make Ahead Brunch
Around the holidays I like to try and make most breakfast/brunch items ahead of time. This works really well for Christmas Eve morning and Christmas morning, when I’d rather be relaxing with family and friends. Plus, most likely there will be a lot of cooking for Christmas Eve and Christmas dinner, and as much as I enjoy cooking, I really don’t want to spend two entire days in the kitchen. So, here are some tips and ideas for make ahead breakfast/brunch.
Breakfast casseroles – These are great because it actually works better to prep these the night before. You can make it sweet or savory. My mom often makes one of each. All you need to do in the morning is pop it in the oven to bake, as you relax. I’ll be posting some recipes within the next week, so stay tuned.
Fresh Fruit/Fruit Salad – Many winter fruits are hardy enough to prepare the night before. You can supreme grapefruits and oranges the night before. I like serving them mixed in a salad with a sprinkle of coarse sea salt. If you’d like to add avocado like this beautiful and delicious winter salad, cut the avocado in the morning just before serving. Apples and pears are also best cut before just before serving. Pomegranates can be seeded ahead of time and stored in airtight containers.
Homemade Cinnamon Rolls – I would make these the day before, and then just gently reheat in the oven for a few minutes.
Frittatas – can be made ahead of time and sliced and served at room temperature or gently reheated.
Homemade Granola – with yogurt or milk
