Roast (Cooking Technique)
To roast in cooking means to cook something by surrounding it with dry heat. This is usually done in the oven cooking meat, vegetables, or fruit at low or high temperatures for long periods of time. This could also be done over a fire, such as spit roasting a game bird or pig. When roasting food, it browns the exterior, creating a caramelized intense, sweet flavor to the foods roasted.
